Creamy, dessert-inspired overnight oats that combine banana, vanilla, and a hint of pie-like richness for an easy, nutritious breakfast.
Ingredients
- 1/2 cup rolled oats
- 1/2 cup milk (any variety)
- 1/4 cup plain or vanilla Greek yogurt
- 1 small ripe banana, mashed
- 1 tbsp chia seeds
- 1–2 tsp maple syrup or honey
- 1/4 tsp vanilla extract
- 2–3 tbsp crushed graham crackers (optional, for topping)
- Sliced banana for serving
Instructions
- In a jar or bowl, combine the oats, milk, yogurt, mashed banana, chia seeds, maple syrup, and vanilla.
- Stir well until fully mixed.
- Cover and refrigerate for at least 4 hours or overnight.
- Before serving, stir the oats and adjust the thickness with additional milk if needed.
- Top with sliced banana and crushed graham crackers to mimic banana cream pie.
Notes
- For extra protein, use Greek yogurt and add a scoop of vanilla protein powder.
- Graham crackers can be replaced with granola for a healthier crunch.
