Ingredients
- 12 oz rotini or penne pasta
- 1 cup cherry tomatoes, halved
- 1/2 cup celery, thinly sliced
- 1/3 cup red onion, finely diced
- 1/2 cup cucumber, diced
- 1/4 cup olives, sliced
- Optional: cooked bacon bits
- For Dressing:
- 3/4 cup tomato juice
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 1 tablespoon Worcestershire sauce
- 1 teaspoon hot sauce (or to taste)
- 1/2 teaspoon celery salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon smoked paprika
Instructions
- Cook pasta according to package directions until al dente; drain and cool.
- In a large bowl, combine cooked pasta, tomatoes, celery, red onion, cucumber, olives, and optional bacon.
- In a separate bowl, whisk together all dressing ingredients until well combined.
- Pour dressing over pasta mixture and toss gently to coat.
- Cover and refrigerate for at least 1 hour to allow flavors to develop.
- Toss again before serving and adjust seasoning if needed.
