Description

A hearty breakfast poutine made with crispy roasted potatoes, savory halal beef bacon, cheese curds, and topped with a rich homemade hollandaise sauce for an indulgent morning meal.


Ingredients

  • 2 lbs russet potatoes, cut into fries
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 6 slices halal beef bacon, cooked and chopped
  • 1 1/2 cups cheese curds
  • 3 large egg yolks (for hollandaise)
  • 1/2 cup unsalted butter, melted (for hollandaise)
  • 1 tbsp fresh lemon juice (for hollandaise)
  • 1/4 tsp cayenne pepper (optional)
  • Salt, to taste (for hollandaise)
  • Chopped chives or parsley (for garnish)


Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Toss potato fries with olive oil, salt, and black pepper.
  3. Spread in a single layer on a baking sheet and roast for 35–40 minutes, flipping halfway, until crispy.
  4. While potatoes cook, prepare the hollandaise sauce.
  5. In a heatproof bowl, whisk egg yolks and lemon juice.
  6. Place bowl over a pot of gently simmering water and whisk continuously.
  7. Slowly drizzle in melted butter while whisking until thick and creamy.
  8. Season hollandaise with salt and cayenne pepper if using. Keep warm.
  9. Assemble poutine by topping hot potatoes with cheese curds and chopped beef bacon.
  10. Drizzle generously with hollandaise sauce.
  11. Garnish with fresh chives or parsley and serve immediately.
