Description
A hearty breakfast poutine made with crispy roasted potatoes, savory halal beef bacon, cheese curds, and topped with a rich homemade hollandaise sauce for an indulgent morning meal.
Ingredients
- 2 lbs russet potatoes, cut into fries
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 6 slices halal beef bacon, cooked and chopped
- 1 1/2 cups cheese curds
- 3 large egg yolks (for hollandaise)
- 1/2 cup unsalted butter, melted (for hollandaise)
- 1 tbsp fresh lemon juice (for hollandaise)
- 1/4 tsp cayenne pepper (optional)
- Salt, to taste (for hollandaise)
- Chopped chives or parsley (for garnish)
Instructions
- Preheat the oven to 425°F (220°C).
- Toss potato fries with olive oil, salt, and black pepper.
- Spread in a single layer on a baking sheet and roast for 35–40 minutes, flipping halfway, until crispy.
- While potatoes cook, prepare the hollandaise sauce.
- In a heatproof bowl, whisk egg yolks and lemon juice.
- Place bowl over a pot of gently simmering water and whisk continuously.
- Slowly drizzle in melted butter while whisking until thick and creamy.
- Season hollandaise with salt and cayenne pepper if using. Keep warm.
- Assemble poutine by topping hot potatoes with cheese curds and chopped beef bacon.
- Drizzle generously with hollandaise sauce.
- Garnish with fresh chives or parsley and serve immediately.

- Serve immediately for best texture.
