Description
A decadent breakfast twist on classic poutine, featuring crispy breakfast potatoes topped with cheese curds, bacon, and a rich, silky hollandaise sauce.
Ingredients
- 4 cups diced breakfast potatoes or frozen hash browns
- 2 tbsp olive oil
- 1/2 tsp paprika
- 1/2 tsp garlic powder
- Salt and pepper to taste
- 1 cup cheese curds (or shredded mozzarella)
- 6 slices bacon, cooked and crumbled
- 2 green onions, sliced
- Hollandaise Sauce:
- 3 large egg yolks
- 1 tbsp lemon juice
- 1/2 cup unsalted butter, melted and hot
- 1/4 tsp salt
- 1/8 tsp cayenne pepper (optional)
Instructions
- Preheat oven to 425°F (220°C). Toss diced potatoes with olive oil, paprika, garlic powder, salt, and pepper.
- Spread potatoes on a baking sheet and roast 25–30 minutes until crispy, flipping halfway.
- Prepare the hollandaise: In a heatproof bowl, whisk egg yolks and lemon juice until slightly thickened.
- Set the bowl over a pot of gently simmering water (double boiler) and slowly drizzle in hot melted butter while whisking continuously.
- Whisk until thick and glossy; season with salt and cayenne.
- Assemble: Place hot potatoes in a serving dish. Top with cheese curds and bacon.
- Spoon warm hollandaise sauce over the top.
- Garnish with sliced green onions and serve immediately.

- Serve hollandaise immediately for the best texture.
- Add a fried egg or poached egg on top for extra richness.
- Swap bacon for breakfast sausage or ham.
