Ingredients
- 2 lbs baby potatoes, halved
- 1/2 cup mayonnaise
- 1/4 cup grated Parmesan cheese
- 2 tablespoons lemon juice
- 1 tablespoon Dijon mustard
- 2 teaspoons Worcestershire sauce (vegetarian if preferred)
- 1 teaspoon garlic powder
- Salt, to taste
- Black pepper, to taste
- 1/2 cup chopped romaine lettuce
- 1/3 cup croutons, crushed
- Optional: chopped fresh parsley
Instructions
- Place potatoes in a large pot of salted water and bring to a boil.
- Cook for 12–15 minutes until fork-tender, then drain and let cool slightly.
- In a bowl, whisk together mayonnaise, Parmesan cheese, lemon juice, Dijon mustard, Worcestershire sauce, garlic powder, salt, and pepper.
- Add warm potatoes to a large bowl and gently toss with Caesar dressing.
- Fold in chopped romaine lettuce.
- Top with crushed croutons and optional parsley.
- Chill for 30 minutes before serving or serve slightly warm.
