Caesar Potato Salad is a creamy, savory twist on classic potato salad, combining tender potatoes with a bold Caesar-style dressing, Parmesan cheese, and crunchy toppings for a rich and satisfying side dish.


Ingredients

  • 2 lbs baby potatoes, halved
  • 1/2 cup mayonnaise
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons lemon juice
  • 1 tablespoon Dijon mustard
  • 2 teaspoons Worcestershire sauce (vegetarian if preferred)
  • 1 teaspoon garlic powder
  • Salt, to taste
  • Black pepper, to taste
  • 1/2 cup chopped romaine lettuce
  • 1/3 cup croutons, crushed
  • Optional: chopped fresh parsley


Instructions

  1. Place potatoes in a large pot of salted water and bring to a boil.
  2. Cook for 12–15 minutes until fork-tender, then drain and let cool slightly.
  3. In a bowl, whisk together mayonnaise, Parmesan cheese, lemon juice, Dijon mustard, Worcestershire sauce, garlic powder, salt, and pepper.
  4. Add warm potatoes to a large bowl and gently toss with Caesar dressing.
  5. Fold in chopped romaine lettuce.
  6. Top with crushed croutons and optional parsley.
  7. Chill for 30 minutes before serving or serve slightly warm.
