Description

Cauliflower Casserole is a creamy, cheesy, and comforting baked dish featuring tender cauliflower florets in a rich sauce topped with melted cheese — a perfect low-carb alternative to traditional potato casseroles.


Ingredients

  • 1 large head cauliflower, cut into florets (about 6 cups)
  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • 1 cup sour cream
  • ½ cup cream cheese, softened
  • 1 cup shredded cheddar cheese (plus ½ cup for topping)
  • ¼ cup grated Parmesan cheese
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon onion powder
  • ¼ teaspoon paprika (optional)
  • 2 tablespoons chopped fresh parsley or green onions (for garnish)


Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a 9×9-inch baking dish.
  2. Bring a large pot of salted water to a boil. Add cauliflower florets and cook for 5 minutes until just tender. Drain well and set aside.
  3. In a large skillet, melt butter over medium heat. Add garlic and sauté for 1 minute until fragrant.
  4. Stir in sour cream, cream cheese, 1 cup cheddar cheese, Parmesan cheese, salt, pepper, onion powder, and paprika. Mix until melted and creamy.
  5. Fold in the cooked cauliflower and stir until evenly coated with the cheese sauce.
  6. Transfer the mixture to the prepared baking dish and spread evenly. Top with the remaining ½ cup cheddar cheese.
  7. Bake for 20–25 minutes, or until bubbly and golden on top.
  8. Let cool for 5 minutes, then garnish with chopped parsley or green onions before serving.
