Ingredients
- 2 tablespoons butter
- 1 small onion, diced
- 2 cloves garlic, minced
- 2 cups cooked shredded chicken (rotisserie works great)
- 1 (10.5-ounce) can cream of chicken soup
- 1 cup chicken broth
- 1 cup frozen mixed vegetables (peas, carrots, corn)
- ½ teaspoon garlic powder
- ½ teaspoon black pepper
- ¼ teaspoon salt
- Cheddar Bay Biscuit Topping:
- 2 cups Bisquick mix
- 1 cup shredded sharp cheddar cheese
- ⅔ cup milk
- 3 tablespoons melted butter
- 1 teaspoon garlic powder
- 1 teaspoon dried parsley
Instructions
- Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
- In a skillet, melt butter over medium heat. Add diced onion and cook for 3–4 minutes until softened. Add garlic and cook for 30 seconds more.
- Stir in shredded chicken, cream of chicken soup, chicken broth, frozen vegetables, garlic powder, salt, and black pepper. Mix until combined and heated through.
- Pour the chicken mixture into the prepared baking dish and spread evenly.
- In a medium bowl, combine Bisquick mix, shredded cheddar cheese, and milk. Stir until just combined (do not overmix).
- Drop spoonfuls of the biscuit mixture evenly over the top of the chicken filling to form a cobbler-like crust.
- Bake for 25–30 minutes or until the top is golden brown and the filling is bubbly.
- In a small bowl, mix melted butter, garlic powder, and parsley. Brush over the baked biscuit topping while still warm.
- Let cool slightly before serving.
