Description
Tender baked chicken breasts topped with sautéed fajita peppers, onions, and melted cheese for a quick, flavorful, family-friendly meal.
Ingredients
- 4 boneless skinless chicken breasts
- 2 tbsp olive oil
- 1 packet fajita seasoning (or 2 tbsp homemade seasoning)
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 medium onion, sliced
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- Salt and pepper to taste
- Fresh cilantro for garnish (optional)
Instructions
- Preheat oven to 400°F (205°C). Lightly grease a baking dish.
- Season chicken breasts with half of the fajita seasoning, salt, and pepper. Place them in the baking dish.
- In a skillet, heat olive oil over medium heat. Add sliced peppers and onions.
- Sprinkle remaining fajita seasoning over the vegetables and cook 4–5 minutes until slightly softened.
- Spread the sautéed peppers and onions evenly over the chicken.
- Top with a mixture of cheddar and Monterey Jack cheese.
- Bake for 20–25 minutes, or until chicken reaches an internal temperature of 165°F (74°C).
- Garnish with cilantro and serve warm.
Notes
- Slice chicken breasts in half to reduce cooking time.
- Add jalapeños for extra heat.
- Serve over rice, cauliflower rice, or with tortillas.
