Description

Tender baked chicken breasts topped with sautéed fajita peppers, onions, and melted cheese for a quick, flavorful, family-friendly meal.


Ingredients

  • 4 boneless skinless chicken breasts
  • 2 tbsp olive oil
  • 1 packet fajita seasoning (or 2 tbsp homemade seasoning)
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 medium onion, sliced
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)


Instructions

  1. Preheat oven to 400°F (205°C). Lightly grease a baking dish.
  2. Season chicken breasts with half of the fajita seasoning, salt, and pepper. Place them in the baking dish.
  3. In a skillet, heat olive oil over medium heat. Add sliced peppers and onions.
  4. Sprinkle remaining fajita seasoning over the vegetables and cook 4–5 minutes until slightly softened.
  5. Spread the sautéed peppers and onions evenly over the chicken.
  6. Top with a mixture of cheddar and Monterey Jack cheese.
  7. Bake for 20–25 minutes, or until chicken reaches an internal temperature of 165°F (74°C).
  8. Garnish with cilantro and serve warm.

Notes

  • Slice chicken breasts in half to reduce cooking time.
  • Add jalapeños for extra heat.
  • Serve over rice, cauliflower rice, or with tortillas.
