Description

A rich and comforting baked casserole made with tender chicken, fresh spinach, and creamy cream cheese sauce topped with melted cheese — a perfect low-carb, family-friendly dinner.


Ingredients

  • 2 tablespoons olive oil
  • 1 ½ pounds boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 cups fresh spinach, chopped
  • 8 ounces cream cheese, softened
  • ½ cup sour cream
  • ½ cup heavy cream
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • Fresh parsley, chopped (for garnish)


Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish with olive oil or nonstick spray.
  2. Heat olive oil in a large skillet over medium heat. Add the chicken pieces and cook for 6–8 minutes until browned and cooked through. Set aside.
  3. In the same skillet, add spinach and cook for 2–3 minutes until wilted. Remove from heat.
  4. In a large bowl, combine softened cream cheese, sour cream, heavy cream, garlic powder, onion powder, salt, pepper, and Italian seasoning. Mix until smooth.
  5. Add cooked chicken and spinach to the cream cheese mixture and stir to combine.
  6. Transfer the mixture to the prepared baking dish and spread evenly.
  7. Top with mozzarella and Parmesan cheese.
  8. Bake for 20–25 minutes, or until bubbly and golden on top.
  9. Remove from oven and let cool for 5 minutes before serving. Garnish with chopped parsley.

Notes

  • Use rotisserie chicken for a faster prep time.
  • Frozen spinach can be substituted — thaw and drain it thoroughly before use.
  • Add cooked pasta or rice for a heartier casserole.
