Description
A rich and comforting baked casserole made with tender chicken, fresh spinach, and creamy cream cheese sauce topped with melted cheese — a perfect low-carb, family-friendly dinner.
Ingredients
- 2 tablespoons olive oil
- 1 ½ pounds boneless, skinless chicken breasts, cut into bite-sized pieces
- 2 cups fresh spinach, chopped
- 8 ounces cream cheese, softened
- ½ cup sour cream
- ½ cup heavy cream
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 teaspoon Italian seasoning
- 1 cup shredded mozzarella cheese
- ½ cup grated Parmesan cheese
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish with olive oil or nonstick spray.
- Heat olive oil in a large skillet over medium heat. Add the chicken pieces and cook for 6–8 minutes until browned and cooked through. Set aside.
- In the same skillet, add spinach and cook for 2–3 minutes until wilted. Remove from heat.
- In a large bowl, combine softened cream cheese, sour cream, heavy cream, garlic powder, onion powder, salt, pepper, and Italian seasoning. Mix until smooth.
- Add cooked chicken and spinach to the cream cheese mixture and stir to combine.
- Transfer the mixture to the prepared baking dish and spread evenly.
- Top with mozzarella and Parmesan cheese.
- Bake for 20–25 minutes, or until bubbly and golden on top.
- Remove from oven and let cool for 5 minutes before serving. Garnish with chopped parsley.
Notes
- Use rotisserie chicken for a faster prep time.
- Frozen spinach can be substituted — thaw and drain it thoroughly before use.
- Add cooked pasta or rice for a heartier casserole.
- This dish reheats well and makes great leftovers.
