Ingredients

  • 2 cups cooked chicken, shredded or diced
  • 1 ripe avocado, mashed
  • 1/3 cup mayonnaise or Greek yogurt
  • 1 tbsp lime juice
  • 1/4 cup red onion, finely diced
  • 1/4 cup celery, finely diced
  • 1/4 cup fresh cilantro or parsley, chopped
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • 4 large flour tortillas
  • 1 cup shredded lettuce (optional)


Instructions

  1. In a mixing bowl, combine shredded chicken, mashed avocado, mayonnaise (or yogurt), lime juice, onion, celery, cilantro, garlic powder, salt, and pepper.
  2. Stir until well combined and creamy.
  3. Lay tortillas flat and optionally add a layer of shredded lettuce.
  4. Spoon chicken avocado mixture evenly onto each tortilla.
  5. Roll tightly, then slice into pinwheels or serve whole as wraps.
  6. Refrigerate 30 minutes for easier slicing if making roll-ups.
