Ingredients
- 2 cups cooked chicken, shredded or diced
- 1 ripe avocado, mashed
- 1/3 cup mayonnaise or Greek yogurt
- 1 tbsp lime juice
- 1/4 cup red onion, finely diced
- 1/4 cup celery, finely diced
- 1/4 cup fresh cilantro or parsley, chopped
- 1/2 tsp garlic powder
- Salt and pepper to taste
- 4 large flour tortillas
- 1 cup shredded lettuce (optional)
Instructions
- In a mixing bowl, combine shredded chicken, mashed avocado, mayonnaise (or yogurt), lime juice, onion, celery, cilantro, garlic powder, salt, and pepper.
- Stir until well combined and creamy.
- Lay tortillas flat and optionally add a layer of shredded lettuce.
- Spoon chicken avocado mixture evenly onto each tortilla.
- Roll tightly, then slice into pinwheels or serve whole as wraps.
- Refrigerate 30 minutes for easier slicing if making roll-ups.
