Description

A fresh and flavorful baked chicken casserole topped with juicy tomatoes, garlic, basil, and melted cheese—bringing classic bruschetta flavors into a comforting dinner bake.


Ingredients

  • 4 boneless skinless chicken breasts
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp Italian seasoning
  • 2 cups cherry tomatoes, diced
  • 2 cloves garlic, minced
  • 2 tbsp balsamic glaze
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated parmesan cheese
  • 1/4 cup chopped fresh basil
  • Cooking spray or butter for greasing


Instructions

  1. Preheat oven to 190°C (375°F) and grease a baking dish.
  2. Season chicken breasts with salt, pepper, and Italian seasoning.
  3. Heat olive oil in a skillet and sear chicken for 2–3 minutes per side until lightly golden.
  4. Transfer chicken to the prepared baking dish.
  5. In a bowl, mix tomatoes, garlic, and half of the basil.
  6. Spoon tomato mixture evenly over the chicken.
  7. Drizzle balsamic glaze over the top.
  8. Sprinkle mozzarella and parmesan cheeses evenly.
  9. Bake uncovered for 25–30 minutes until chicken is cooked through and cheese is melted.
  10. Garnish with remaining basil and serve warm.

  • Use fresh ripe tomatoes for best flavor.
  • Serve over pasta, rice, or with crusty bread.
