Ingredients
- 4 boneless skinless chicken breasts
- 1 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp Italian seasoning
- 2 cups cherry tomatoes, diced
- 2 cloves garlic, minced
- 2 tbsp balsamic glaze
- 1 cup shredded mozzarella cheese
- 1/4 cup grated parmesan cheese
- 1/4 cup chopped fresh basil
- Cooking spray or butter for greasing
Instructions
- Preheat oven to 190°C (375°F) and grease a baking dish.
- Season chicken breasts with salt, pepper, and Italian seasoning.
- Heat olive oil in a skillet and sear chicken for 2–3 minutes per side until lightly golden.
- Transfer chicken to the prepared baking dish.
- In a bowl, mix tomatoes, garlic, and half of the basil.
- Spoon tomato mixture evenly over the chicken.
- Drizzle balsamic glaze over the top.
- Sprinkle mozzarella and parmesan cheeses evenly.
- Bake uncovered for 25–30 minutes until chicken is cooked through and cheese is melted.
- Garnish with remaining basil and serve warm.
Notes
- Use fresh ripe tomatoes for best flavor.
- Serve over pasta, rice, or with crusty bread.
- Leftovers reheat well.
