Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • Salt and black pepper, to taste
  • 2 cloves garlic, minced
  • ½ cup whiskey (such as Jameson or bourbon)
  • 1 cup heavy cream
  • 1 tablespoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • ½ teaspoon dried thyme (or 1 teaspoon fresh thyme)
  • ½ cup grated Parmesan cheese (optional, for extra richness)
  • Fresh parsley, chopped (for garnish)


Instructions

  1. Season the chicken breasts on both sides with salt and pepper.
  2. Heat olive oil and butter in a large skillet over medium-high heat. Add chicken and sear for 4–5 minutes per side until golden brown and cooked through. Remove from skillet and set aside.
  3. Reduce heat to medium and add minced garlic. Sauté for 30 seconds until fragrant.
  4. Carefully pour in the whiskey (stand back slightly as it may flame). Stir and simmer for 1–2 minutes, allowing the alcohol to cook off.
  5. Stir in heavy cream, Dijon mustard, Worcestershire sauce, and thyme. Simmer gently for 3–4 minutes until the sauce thickens slightly.
  6. Stir in Parmesan cheese if using, and adjust seasoning with salt and pepper to taste.
  7. Return the chicken to the skillet and spoon sauce over the top. Simmer for another 2–3 minutes to heat through.
  8. Serve warm, garnished with fresh parsley. Pairs beautifully with mashed potatoes, rice, or roasted vegetables.
