Ingredients
- 4 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 tablespoon butter
- Salt and black pepper, to taste
- 2 cloves garlic, minced
- ½ cup whiskey (such as Jameson or bourbon)
- 1 cup heavy cream
- 1 tablespoon Dijon mustard
- 1 teaspoon Worcestershire sauce
- ½ teaspoon dried thyme (or 1 teaspoon fresh thyme)
- ½ cup grated Parmesan cheese (optional, for extra richness)
- Fresh parsley, chopped (for garnish)
Instructions
- Season the chicken breasts on both sides with salt and pepper.
- Heat olive oil and butter in a large skillet over medium-high heat. Add chicken and sear for 4–5 minutes per side until golden brown and cooked through. Remove from skillet and set aside.
- Reduce heat to medium and add minced garlic. Sauté for 30 seconds until fragrant.
- Carefully pour in the whiskey (stand back slightly as it may flame). Stir and simmer for 1–2 minutes, allowing the alcohol to cook off.
- Stir in heavy cream, Dijon mustard, Worcestershire sauce, and thyme. Simmer gently for 3–4 minutes until the sauce thickens slightly.
- Stir in Parmesan cheese if using, and adjust seasoning with salt and pepper to taste.
- Return the chicken to the skillet and spoon sauce over the top. Simmer for another 2–3 minutes to heat through.
- Serve warm, garnished with fresh parsley. Pairs beautifully with mashed potatoes, rice, or roasted vegetables.

- Use a smooth whiskey or bourbon for the best flavor balance — avoid heavily peated or smoky varieties.
- If the sauce becomes too thick, thin it slightly with a splash of chicken broth.
- For a milder flavor, reduce the whiskey to ⅓ cup and increase cream to 1¼ cups.
