Ingredients

  • 1 cup yellow cornmeal
  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 2 large eggs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup honey
  • For Whipped Honey Butter:
    • 1/2 cup unsalted butter, softened
    • 1/4 cup honey
    • 1 tablespoon powdered sugar


Instructions

  1. Preheat oven to 350°F (175°C) and grease an 8×8-inch baking dish.
  2. In a large bowl, whisk together cornmeal, flour, sugar, baking powder, and salt.
  3. In another bowl, mix milk, eggs, melted butter, and honey.
  4. Combine wet ingredients with dry ingredients until just mixed.
  5. Pour batter into prepared baking dish and smooth the top.
  6. Bake for 30–35 minutes, until golden and a toothpick inserted comes out clean.
  7. Meanwhile, whip softened butter, honey, and powdered sugar until light and fluffy.
  8. Serve cornbread cake warm with whipped honey butter on top.
