Description
A cozy, protein-packed grilled steak bowl with tender zucchini, fluffy grains, and simple seasonings for a satisfying and wholesome meal.
Ingredients
- 1 lb (450 g) sirloin or ribeye steak
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 2 medium zucchinis, sliced
- 2 cups cooked rice or quinoa
- 1 tbsp butter (optional)
- 1 tbsp chopped fresh parsley or rosemary (optional)
Instructions
- Preheat grill or grill pan to medium-high heat.
- Rub steak with 1 tablespoon olive oil, salt, pepper, garlic powder, and smoked paprika.
- Grill steak 4–5 minutes per side or until desired doneness.
- Remove steak from heat and let rest for 5 minutes before slicing.
- Toss zucchini with remaining olive oil and a pinch of salt and pepper.
- Grill zucchini 2–3 minutes per side until tender with grill marks.
- Divide cooked rice or quinoa into bowls.
- Top with sliced steak and grilled zucchini.
- Add butter and fresh herbs if desired and serve warm.
Notes
- Letting the steak rest keeps it juicy.
- Swap zucchini for asparagus or bell peppers if preferred.
- Add a drizzle of chimichurri or garlic sauce for extra flavor.
