Description
A rich and comforting crockpot meal made with tender chicken slow-cooked in a creamy ranch sauce — full of flavor, easy to prepare, and perfect for busy weeknights or cozy dinners.
Ingredients
- 4 boneless, skinless chicken breasts (or thighs)
- 1 (1-ounce) packet ranch seasoning mix
- 1 (10.5-ounce) can cream of chicken soup
- 8 ounces cream cheese, softened
- ½ cup chicken broth
- ½ teaspoon garlic powder
- ¼ teaspoon black pepper
- 1 tablespoon butter (optional, for richness)
- Chopped fresh parsley, for garnish
- Cooked rice, mashed potatoes, or pasta, for serving
Instructions
- Lightly grease your crockpot with nonstick spray.
- Place chicken breasts in the bottom of the crockpot.
- In a medium bowl, mix together ranch seasoning, cream of chicken soup, cream cheese, chicken broth, garlic powder, black pepper, and butter (if using) until smooth.
- Pour the mixture evenly over the chicken.
- Cover and cook on LOW for 6–7 hours or on HIGH for 3–4 hours, until the chicken is tender and easily shredded.
- Once cooked, shred the chicken in the crockpot and stir to fully coat in the creamy ranch sauce.
- Serve warm over rice, mashed potatoes, or pasta. Garnish with chopped parsley if desired.
Notes
- For a lighter version, substitute light cream cheese or Greek yogurt for the full-fat cream cheese.
- Add cooked bacon bits and shredded cheddar cheese for a ‘crack chicken’ twist.
- This recipe also works well with chicken thighs for juicier results.
- Leftovers make a great filling for sandwiches or wraps the next day.
