Description

Ingredients

  • 1 ½ pounds boneless, skinless chicken breasts
  • 3 cups low-sodium chicken broth
  • 1 (24-ounce) jar marinara sauce
  • 1 cup heavy cream
  • 1 cup shredded Parmesan cheese
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 cup uncooked small pasta (like ditalini or elbow macaroni)
  • 2 tablespoons olive oil
  • Fresh basil or parsley, for garnish
  • Croutons or shredded mozzarella, for topping (optional)


Instructions

  1. Lightly grease the crock pot with olive oil or nonstick spray.
  2. Add chicken breasts, chicken broth, marinara sauce, onion, garlic, Italian seasoning, salt, and pepper to the crock pot. Stir to combine.
  3. Cover and cook on LOW for 5–6 hours or HIGH for 2½–3 hours, until chicken is fully cooked and tender.
  4. Remove the chicken and shred it using two forks, then return it to the slow cooker.
  5. Stir in the heavy cream, Parmesan cheese, and uncooked pasta.
  6. Cover and cook for another 20–30 minutes, until the pasta is tender and the soup is creamy.
  7. Taste and adjust seasoning if needed.
  8. Serve warm, garnished with fresh basil, parsley, and optional croutons or mozzarella cheese.
