Ingredients

  • 2 large cucumbers
  • 4 oz cream cheese, softened
  • 4 oz smoked salmon or cooked shrimp
  • 1 avocado, sliced
  • 1 tbsp sesame seeds
  • 1 tbsp soy sauce or coconut aminos
  • 1 tsp rice vinegar (optional)
  • 1 sheet nori, cut into thin strips (optional for flavor)


Instructions

  1. Peel the cucumbers partially, leaving thin green stripes, then slice them in half and scoop out the seeds to form a hollow boat.
  2. Spread a thin layer of cream cheese inside each cucumber half.
  3. Fill the center with smoked salmon or shrimp, followed by sliced avocado.
  4. Press the cucumber halves back together and wrap tightly in plastic wrap.
  5. Chill for 10–15 minutes, then slice into sushi-style rounds.
  6. Sprinkle with sesame seeds and serve with soy sauce or coconut aminos.
