Description
A simple, fresh, low-carb cucumber sushi roll made without rice, perfect for keto and light snacking.
Ingredients
- 2 large cucumbers
- 4 oz cream cheese, softened
- 4 oz smoked salmon or cooked shrimp
- 1 avocado, sliced
- 1 tbsp sesame seeds
- 1 tbsp soy sauce or coconut aminos
- 1 tsp rice vinegar (optional)
- 1 sheet nori, cut into thin strips (optional for flavor)
Instructions
- Peel the cucumbers partially, leaving thin green stripes, then slice them in half and scoop out the seeds to form a hollow boat.
- Spread a thin layer of cream cheese inside each cucumber half.
- Fill the center with smoked salmon or shrimp, followed by sliced avocado.
- Press the cucumber halves back together and wrap tightly in plastic wrap.
- Chill for 10–15 minutes, then slice into sushi-style rounds.
- Sprinkle with sesame seeds and serve with soy sauce or coconut aminos.
Notes
- Use a mandoline for even cucumber slicing.
- Chill longer for firmer sushi rounds.
- Swap fillings with crab, tuna, or vegetables for variety.
