Ingredients
- 1 tablespoon olive oil
- 1 pound ground chicken
- 1 small onion, finely diced
- 1 small green bell pepper, diced
- 2 cloves garlic, minced
- 1 (8-ounce) can tomato sauce
- 2 tablespoons ketchup
- 1 tablespoon Worcestershire sauce
- 1 tablespoon brown sugar
- 1 teaspoon Cajun seasoning
- ½ teaspoon smoked paprika
- ¼ teaspoon crushed red pepper flakes (optional)
- Salt and black pepper, to taste
- 4 sandwich buns or brioche rolls
- 1 tablespoon butter, for toasting buns
- Fresh parsley or green onions, for garnish (optional)
Instructions
- In a large skillet, heat olive oil over medium heat. Add ground chicken and cook, breaking it apart with a spoon, until no longer pink.
- Add diced onion and bell pepper. Cook for 3–4 minutes until softened.
- Stir in minced garlic and cook for 30 seconds until fragrant.
- Add tomato sauce, ketchup, Worcestershire sauce, brown sugar, Cajun seasoning, smoked paprika, red pepper flakes, salt, and pepper. Stir to combine.
- Reduce heat to low and simmer for 10–12 minutes, stirring occasionally, until the mixture thickens and flavors blend.
- Meanwhile, butter the buns and toast them on a skillet or under the broiler until golden brown.
- Spoon the Cajun chicken mixture onto toasted buns and garnish with parsley or green onions if desired.
- Serve hot with a side of fries, chips, or coleslaw.

- Adjust Cajun seasoning to your spice preference — add more for extra heat.
- Try topping with melted cheese or a spoonful of coleslaw for extra flavor.
- Use ground turkey or beef as an alternative protein.
- Leftover filling can be stored in the fridge for up to 3 days or frozen for up to 2 months.
