Description

Easy Beef Stroganoff Tortellini is a comforting one-pan meal that combines tender beef, cheesy tortellini, and a creamy mushroom stroganoff sauce for a quick and satisfying dinner.


Ingredients

  • 1 lb sirloin steak or ground beef
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 8 oz mushrooms, sliced
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon paprika
  • Salt, to taste
  • Black pepper, to taste
  • 2 cups beef broth
  • 1 (20 oz) package refrigerated cheese tortellini
  • 1 cup sour cream
  • 2 tablespoons cream cheese
  • Optional: chopped fresh parsley


Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add beef and cook until browned; remove and set aside if using steak slices.
  3. In the same skillet, sauté onion and mushrooms until softened.
  4. Add garlic, paprika, salt, and pepper; cook for 30 seconds.
  5. Stir in Worcestershire sauce and beef broth.
  6. Add tortellini, cover, and simmer according to package directions until tender.
  7. Reduce heat to low and stir in sour cream and cream cheese until smooth.
  8. Return beef to the skillet and heat through.
  9. Garnish with parsley and serve warm.

Notes

  • Do not boil after adding sour cream to prevent curdling.
  • Ground beef can be used for convenience.
  • Add spinach for extra color and nutrition.
