Easy Beef Stroganoff Tortellini is a comforting one-pan meal that combines tender beef, cheesy tortellini, and a creamy mushroom stroganoff sauce for a quick and satisfying dinner.
Ingredients
- 1 lb sirloin steak or ground beef
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 8 oz mushrooms, sliced
- 1 tablespoon Worcestershire sauce
- 1 teaspoon paprika
- Salt, to taste
- Black pepper, to taste
- 2 cups beef broth
- 1 (20 oz) package refrigerated cheese tortellini
- 1 cup sour cream
- 2 tablespoons cream cheese
- Optional: chopped fresh parsley
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add beef and cook until browned; remove and set aside if using steak slices.
- In the same skillet, sauté onion and mushrooms until softened.
- Add garlic, paprika, salt, and pepper; cook for 30 seconds.
- Stir in Worcestershire sauce and beef broth.
- Add tortellini, cover, and simmer according to package directions until tender.
- Reduce heat to low and stir in sour cream and cream cheese until smooth.
- Return beef to the skillet and heat through.
- Garnish with parsley and serve warm.
Notes
- Do not boil after adding sour cream to prevent curdling.
- Ground beef can be used for convenience.
- Add spinach for extra color and nutrition.
- Leftovers reheat gently on the stovetop.
