Ingredients
- 2 pounds baby potatoes or Yukon Gold potatoes, cut into 1-inch chunks
- 1 (1-ounce) packet Lipton Onion Soup Mix
- 3 tablespoons olive oil
- ½ teaspoon garlic powder (optional)
- ¼ teaspoon black pepper
- 1 tablespoon chopped fresh parsley (for garnish)
Instructions
- Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper or foil for easy cleanup.
- In a large bowl, combine potato chunks, olive oil, onion soup mix, garlic powder (if using), and black pepper. Toss until potatoes are evenly coated.
- Spread the potatoes out in a single layer on the prepared baking sheet.
- Roast for 35–40 minutes, stirring halfway through, until potatoes are golden brown and crispy on the edges.
- Remove from oven, sprinkle with fresh parsley, and serve hot.
