Description

Soft, cinnamon-spiced cookies inspired by the Gilmore Girls coffee cake, topped with a buttery crumble and sweet glaze.


Ingredients

  • 2 1/4 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 3/4 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 large egg
  • 2 tsp vanilla extract
  • 1/3 cup sour cream
  • Crumble Topping:
  • 1/2 cup all-purpose flour
  • 1/3 cup brown sugar
  • 1 tsp cinnamon
  • 1/4 cup melted butter
  • Glaze:
  • 1 cup powdered sugar
  • 12 tbsp milk
  • 1/2 tsp vanilla extract


Instructions

  1. Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. Prepare the crumble topping by mixing flour, brown sugar, and cinnamon. Stir in melted butter until crumbly; set aside.
  3. In a bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.
  4. In another bowl, cream softened butter with granulated and brown sugar until light and fluffy.
  5. Add egg and vanilla; mix until combined. Stir in sour cream.
  6. Gradually add the dry ingredients to the wet mixture and mix to form a soft dough.
  7. Scoop dough into balls (about 2 tbsp each) and place on baking sheets.
  8. Lightly flatten each dough ball and press crumble topping generously onto each cookie.
  9. Bake for 10–12 minutes, until the edges are set but centers remain soft. Cool completely.
  10. Whisk glaze ingredients together and drizzle over cooled cookies before serving.

Notes

  • Chill the dough 15 minutes if it’s too sticky to scoop.
  • For extra cinnamon flavor, add a swirl of cinnamon sugar before baking.
  • Cookies stay soft for 3–4 days stored in an airtight container.
