Description
Soft, cinnamon-spiced cookies inspired by the Gilmore Girls coffee cake, topped with a buttery crumble and sweet glaze.
Ingredients
- 2 1/4 cups all-purpose flour
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 3/4 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 1/4 cup brown sugar
- 1 large egg
- 2 tsp vanilla extract
- 1/3 cup sour cream
- Crumble Topping:
- 1/2 cup all-purpose flour
- 1/3 cup brown sugar
- 1 tsp cinnamon
- 1/4 cup melted butter
- Glaze:
- 1 cup powdered sugar
- 1–2 tbsp milk
- 1/2 tsp vanilla extract
Instructions
- Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.
- Prepare the crumble topping by mixing flour, brown sugar, and cinnamon. Stir in melted butter until crumbly; set aside.
- In a bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.
- In another bowl, cream softened butter with granulated and brown sugar until light and fluffy.
- Add egg and vanilla; mix until combined. Stir in sour cream.
- Gradually add the dry ingredients to the wet mixture and mix to form a soft dough.
- Scoop dough into balls (about 2 tbsp each) and place on baking sheets.
- Lightly flatten each dough ball and press crumble topping generously onto each cookie.
- Bake for 10–12 minutes, until the edges are set but centers remain soft. Cool completely.
- Whisk glaze ingredients together and drizzle over cooled cookies before serving.
Notes
- Chill the dough 15 minutes if it’s too sticky to scoop.
- For extra cinnamon flavor, add a swirl of cinnamon sugar before baking.
- Cookies stay soft for 3–4 days stored in an airtight container.
