Ingredients
- ½ cup unsweetened cocoa powder
- ¾ cup whole wheat flour (or almond flour for gluten-free option)
- 1 teaspoon baking powder
- ¼ teaspoon salt
- 1 cup plain Greek yogurt (unsweetened)
- ¼ cup melted coconut oil (or butter)
- 2 large eggs
- 2 teaspoons vanilla extract
- ⅓ cup zero-calorie sweetener (like erythritol, monk fruit, or stevia blend)
- ¼ cup unsweetened almond milk (or regular milk)
- ¼ cup sugar-free dark chocolate chips (optional)
Instructions
- Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper and lightly grease.
- In a medium bowl, whisk together cocoa powder, flour, baking powder, and salt.
- In another bowl, mix Greek yogurt, coconut oil, eggs, vanilla extract, and sweetener until smooth.
- Add the dry ingredients to the wet mixture and stir until just combined. Stir in almond milk to achieve a thick, smooth batter.
- Fold in chocolate chips if using.
- Spread the batter evenly into the prepared pan.
- Bake for 20–25 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs (do not overbake for fudgy texture).
- Let cool completely before slicing into squares.
- Store in an airtight container in the refrigerator for up to 5 days.
