Ingredients

  • 1/2 cup natural peanut butter
  • 1/2 cup plain non-fat Greek yogurt
  • 1/2 cup honey or maple syrup
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup oat flour
  • 1/2 cup unsweetened cocoa powder
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup dark chocolate chips


Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together peanut butter, Greek yogurt, honey, egg, and vanilla extract until smooth.
  3. In a separate bowl, mix oat flour, cocoa powder, baking soda, and salt.
  4. Add dry ingredients to wet ingredients and stir until combined.
  5. Fold in dark chocolate chips.
  6. Scoop tablespoon-sized portions of dough onto the baking sheet and flatten slightly.
  7. Bake for 10–12 minutes until set.
  8. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a rack.
