Ingredients
- 1 cup brown rice
- 2 cups water
- 1 tbsp olive oil
- 1 onion, chopped
- 1 carrot, sliced
- 1 cup cabbage, shredded
- 1/2 cup canned chickpeas, drained
- 1 clove garlic, minced
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp paprika
Instructions
- Rinse the brown rice and cook it with water according to package instructions.
- Heat olive oil in a pan over medium heat.
- Add onion and garlic, sauté until soft.
- Add carrot and cabbage, cook for 5–7 minutes.
- Stir in chickpeas, salt, black pepper, and paprika.
- Cook for another 3 minutes until heated through.
- Serve vegetables over cooked brown rice.
Notes
- You can substitute vegetables with whatever is in season.
- Use dry beans instead of canned to save more money.
- Add a squeeze of lemon for extra flavor.
