Ingredients

  • 1 cup brown rice
  • 2 cups water
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 1 carrot, sliced
  • 1 cup cabbage, shredded
  • 1/2 cup canned chickpeas, drained
  • 1 clove garlic, minced
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp paprika


Instructions

  1. Rinse the brown rice and cook it with water according to package instructions.
  2. Heat olive oil in a pan over medium heat.
  3. Add onion and garlic, sauté until soft.
  4. Add carrot and cabbage, cook for 5–7 minutes.
  5. Stir in chickpeas, salt, black pepper, and paprika.
  6. Cook for another 3 minutes until heated through.
  7. Serve vegetables over cooked brown rice.

Notes

  • You can substitute vegetables with whatever is in season.
  • Use dry beans instead of canned to save more money.
  • Add a squeeze of lemon for extra flavor.
