Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 3 ripe bananas, mashed
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1/2 cup sour cream
  • 1 tsp vanilla extract
  • 1 cup chopped walnuts
  • Cream Filling & Frosting:
  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 3 cups powdered sugar
  • 1 tsp vanilla extract
  • 23 tbsp heavy cream
  • Extra chopped walnuts for topping


Instructions

  1. Preheat oven to 350°F (175°C). Grease and line two 9-inch cake pans.
  2. Whisk together flour, sugars, baking soda, baking powder, salt, and cinnamon.
  3. In another bowl, mix mashed bananas, eggs, oil, sour cream, and vanilla.
  4. Combine wet and dry ingredients just until smooth; fold in chopped walnuts.
  5. Divide batter between pans and bake 25–30 minutes, until a toothpick comes out clean.
  6. Let cakes cool completely.
  7. Beat cream cheese and butter until creamy.
  8. Add powdered sugar gradually, then vanilla and heavy cream until fluffy.
  9. Spread frosting between the cakes and over the outside.
  10. Sprinkle with extra walnuts and chill 20 minutes before slicing.
