Ingredients
- 2 pounds baby red or Yukon gold potatoes, cut into 1-inch pieces
- 6 slices bacon, chopped
- 3 tablespoons honey
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- ½ teaspoon smoked paprika
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 tablespoon chopped fresh parsley (for garnish)
Instructions
- Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper or foil for easy cleanup.
- In a large skillet, cook chopped bacon over medium heat until crispy. Remove and drain on paper towels, reserving 1 tablespoon of bacon grease.
- In a large mixing bowl, combine potatoes, olive oil, reserved bacon grease, honey, garlic powder, smoked paprika, salt, and black pepper. Toss until the potatoes are evenly coated.
- Spread potatoes in a single layer on the prepared baking sheet.
- Roast for 35–40 minutes, stirring halfway through, until golden brown and crispy on the edges.
- Remove from oven, toss with the cooked bacon, and drizzle with a little extra honey if desired.
- Garnish with chopped parsley and serve warm.
