Ingredients

  • 2 pounds baby red or Yukon gold potatoes, cut into 1-inch pieces
  • 6 slices bacon, chopped
  • 3 tablespoons honey
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon chopped fresh parsley (for garnish)


Instructions

  1. Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper or foil for easy cleanup.
  2. In a large skillet, cook chopped bacon over medium heat until crispy. Remove and drain on paper towels, reserving 1 tablespoon of bacon grease.
  3. In a large mixing bowl, combine potatoes, olive oil, reserved bacon grease, honey, garlic powder, smoked paprika, salt, and black pepper. Toss until the potatoes are evenly coated.
  4. Spread potatoes in a single layer on the prepared baking sheet.
  5. Roast for 35–40 minutes, stirring halfway through, until golden brown and crispy on the edges.
  6. Remove from oven, toss with the cooked bacon, and drizzle with a little extra honey if desired.
  7. Garnish with chopped parsley and serve warm.
