Description

Soft and chewy crème brûlée cookies with a rich vanilla custard flavor, topped with a crisp caramelized sugar crust that cracks just like classic crème brûlée.


Ingredients

  • 2 1/4 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 3/4 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 large egg yolks
  • 2 tsp vanilla extract
  • 1/4 cup heavy cream
  • 1/2 cup granulated sugar (for brûlée topping)


Instructions

  1. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a bowl, whisk together flour, baking soda, and salt.
  3. In a separate bowl, cream butter, granulated sugar, and brown sugar until light and fluffy.
  4. Add egg yolks one at a time, then mix in vanilla extract and heavy cream.
  5. Gradually add dry ingredients and mix until just combined.
  6. Scoop dough into balls and place on prepared baking sheets.
  7. Bake for 10–12 minutes until edges are set but centers remain soft.
  8. Cool cookies completely.
  9. Sprinkle a thin, even layer of granulated sugar on each cookie.
  10. Use a kitchen torch to caramelize the sugar until golden and crisp.
  11. Allow sugar topping to harden before serving.
