Description
Soft and chewy crème brûlée cookies with a rich vanilla custard flavor, topped with a crisp caramelized sugar crust that cracks just like classic crème brûlée.
Ingredients
- 2 1/4 cups all-purpose flour
- 1/2 tsp baking soda
- 1/4 tsp salt
- 3/4 cup unsalted butter, softened
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 2 large egg yolks
- 2 tsp vanilla extract
- 1/4 cup heavy cream
- 1/2 cup granulated sugar (for brûlée topping)
Instructions
- Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a bowl, whisk together flour, baking soda, and salt.
- In a separate bowl, cream butter, granulated sugar, and brown sugar until light and fluffy.
- Add egg yolks one at a time, then mix in vanilla extract and heavy cream.
- Gradually add dry ingredients and mix until just combined.
- Scoop dough into balls and place on prepared baking sheets.
- Bake for 10–12 minutes until edges are set but centers remain soft.
- Cool cookies completely.
- Sprinkle a thin, even layer of granulated sugar on each cookie.
- Use a kitchen torch to caramelize the sugar until golden and crisp.
- Allow sugar topping to harden before serving.
Notes
- Use a light hand when torching to avoid burning.
- Cookies are best enjoyed the same day for maximum crunch.
- If no torch is available, broil briefly while watching closely.
