Description
A hearty baked rotini casserole loaded with seasoned ground beef, sweet corn, creamy ranch sauce, and plenty of melted cheddar cheese for a comforting, family-friendly dinner.
Ingredients
- 12 oz (340 g) rotini pasta
- 1 lb (450 g) ground beef
- 1 tbsp olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 packet ranch seasoning mix
- 1 cup sour cream
- 1/2 cup milk
- 1 1/2 cups sweet corn kernels (fresh, frozen, or canned)
- 2 cups shredded cheddar cheese
- 1/2 tsp black pepper
- 1/2 tsp paprika
- Chopped green onions or parsley for garnish (optional)
Instructions
- Preheat oven to 190°C (375°F) and grease a 9×13-inch baking dish.
- Cook rotini pasta according to package instructions until al dente; drain and set aside.
- Heat olive oil in a large skillet over medium heat.
- Add ground beef and onion; cook until beef is browned and onion is soft.
- Stir in garlic, black pepper, paprika, and ranch seasoning; cook 1 minute.
- Add sour cream, milk, and sweet corn; stir until combined and heated through.
- Fold cooked pasta into the beef mixture.
- Transfer mixture to prepared baking dish.
- Top evenly with shredded cheddar cheese.
- Bake uncovered for 25–30 minutes until bubbly and cheese is melted.
- Garnish with green onions or parsley and serve warm.
Notes
- Use ground turkey as a lighter alternative.
- Add diced jalapeños for a spicy kick.
- Leftovers reheat well the next day.
