Description

A hearty baked rotini casserole loaded with seasoned ground beef, sweet corn, creamy ranch sauce, and plenty of melted cheddar cheese for a comforting, family-friendly dinner.


Ingredients

  • 12 oz (340 g) rotini pasta
  • 1 lb (450 g) ground beef
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 packet ranch seasoning mix
  • 1 cup sour cream
  • 1/2 cup milk
  • 1 1/2 cups sweet corn kernels (fresh, frozen, or canned)
  • 2 cups shredded cheddar cheese
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • Chopped green onions or parsley for garnish (optional)


Instructions

  1. Preheat oven to 190°C (375°F) and grease a 9×13-inch baking dish.
  2. Cook rotini pasta according to package instructions until al dente; drain and set aside.
  3. Heat olive oil in a large skillet over medium heat.
  4. Add ground beef and onion; cook until beef is browned and onion is soft.
  5. Stir in garlic, black pepper, paprika, and ranch seasoning; cook 1 minute.
  6. Add sour cream, milk, and sweet corn; stir until combined and heated through.
  7. Fold cooked pasta into the beef mixture.
  8. Transfer mixture to prepared baking dish.
  9. Top evenly with shredded cheddar cheese.
  10. Bake uncovered for 25–30 minutes until bubbly and cheese is melted.
  11. Garnish with green onions or parsley and serve warm.

Notes

  • Use ground turkey as a lighter alternative.
  • Add diced jalapeños for a spicy kick.
