Ingredients
- 1 (15-ounce) can whole kernel corn, drained
- 1 (15-ounce) can cream-style corn
- 1 (8.5-ounce) box cornbread mix (like Jiffy)
- 1 cup sour cream
- ½ cup melted butter
- 1 cup shredded cheddar cheese (plus extra for topping)
- 6 slices cooked bacon, crumbled
- 1 small onion, finely chopped (optional)
- 2 green onions, sliced (for garnish)
- Salt and pepper to taste
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
- In a large mixing bowl, combine cornbread mix, whole kernel corn, cream-style corn, sour cream, melted butter, and shredded cheddar cheese. Stir until just combined.
- Fold in crumbled bacon and chopped onion, if using. Season lightly with salt and pepper.
- Pour the mixture into the prepared baking dish and spread evenly.
- Bake uncovered for 40–45 minutes, or until golden brown and the center is set.
- Remove from oven and sprinkle with additional cheddar cheese. Return to the oven for 5 minutes, until the cheese is melted and bubbly.
- Let cool slightly before serving. Garnish with sliced green onions.

- For extra spice, add 1 diced jalapeño or a pinch of cayenne pepper to the batter.
