Loaded Potato Taco Bowl is a hearty, comforting bowl made with crispy seasoned potatoes topped with taco-style protein, fresh toppings, cheese, and creamy sauces—combining the best of loaded baked potatoes and taco bowls.
Ingredients
- 3 cups russet potatoes, diced
- 2 tablespoons olive oil
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon chili powder
- Salt, to taste
- Black pepper, to taste
- 1 lb ground beef or ground turkey
- 1 packet taco seasoning
- 1/2 cup water
- 1 cup shredded cheddar or Mexican-blend cheese
- 1/2 cup sour cream or Greek yogurt
- 1/2 cup diced tomatoes
- 1/4 cup sliced green onions
- Optional: sliced avocado or guacamole
Instructions
- Preheat oven to 425°F (220°C).
- Toss diced potatoes with olive oil, paprika, garlic powder, chili powder, salt, and pepper.
- Spread potatoes on a baking sheet and roast for 30–35 minutes, flipping halfway, until crispy and golden.
- While potatoes cook, brown ground meat in a skillet over medium heat.
- Add taco seasoning and water; simmer for 5 minutes until thickened.
- Divide roasted potatoes among serving bowls.
- Top with taco meat, shredded cheese, sour cream, tomatoes, and green onions.
- Add optional avocado or guacamole and serve warm.
