Loaded Potato Taco Bowl is a hearty, comforting bowl made with crispy seasoned potatoes topped with taco-style protein, fresh toppings, cheese, and creamy sauces—combining the best of loaded baked potatoes and taco bowls.


Ingredients

  • 3 cups russet potatoes, diced
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon chili powder
  • Salt, to taste
  • Black pepper, to taste
  • 1 lb ground beef or ground turkey
  • 1 packet taco seasoning
  • 1/2 cup water
  • 1 cup shredded cheddar or Mexican-blend cheese
  • 1/2 cup sour cream or Greek yogurt
  • 1/2 cup diced tomatoes
  • 1/4 cup sliced green onions
  • Optional: sliced avocado or guacamole


Instructions

  1. Preheat oven to 425°F (220°C).
  2. Toss diced potatoes with olive oil, paprika, garlic powder, chili powder, salt, and pepper.
  3. Spread potatoes on a baking sheet and roast for 30–35 minutes, flipping halfway, until crispy and golden.
  4. While potatoes cook, brown ground meat in a skillet over medium heat.
  5. Add taco seasoning and water; simmer for 5 minutes until thickened.
  6. Divide roasted potatoes among serving bowls.
  7. Top with taco meat, shredded cheese, sour cream, tomatoes, and green onions.
  8. Add optional avocado or guacamole and serve warm.
