Description
A hearty and comforting loaded potato taco bowl featuring crispy roasted potatoes, seasoned taco toppings, and creamy sauces all in one satisfying bowl.
Ingredients
- 4 medium russet potatoes, diced
- 2 tbsp olive oil
- 1 tsp smoked paprika
- 1/2 tsp garlic powder
- Salt to taste
- Black pepper to taste
- 1 cup cooked ground beef or ground turkey
- 1 tbsp taco seasoning
- 1/2 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/2 cup cherry tomatoes, chopped
- 1/4 cup green onions, sliced
- 1/4 cup canned corn, drained
- Optional: sliced jalapeños
Instructions
- Preheat oven to 220°C (425°F).
- Toss diced potatoes with olive oil, smoked paprika, garlic powder, salt, and pepper.
- Spread potatoes on a baking sheet and roast for 30–35 minutes, flipping halfway, until crispy.
- Meanwhile, cook ground beef or turkey in a skillet over medium heat.
- Add taco seasoning and cook until fully browned and fragrant.
- Divide roasted potatoes among serving bowls.
- Top with seasoned meat, shredded cheese, sour cream, tomatoes, corn, and green onions.
- Add jalapeños if desired and serve warm.
Notes
- Swap meat for seasoned black beans to make it vegetarian.
- Serve with avocado or guacamole for extra creaminess.
- Best enjoyed fresh while potatoes are crispy.
