Description

A hearty and comforting loaded potato taco bowl featuring crispy roasted potatoes, seasoned taco toppings, and creamy sauces all in one satisfying bowl.


Ingredients

  • 4 medium russet potatoes, diced
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • Salt to taste
  • Black pepper to taste
  • 1 cup cooked ground beef or ground turkey
  • 1 tbsp taco seasoning
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/2 cup cherry tomatoes, chopped
  • 1/4 cup green onions, sliced
  • 1/4 cup canned corn, drained
  • Optional: sliced jalapeños


Instructions

  1. Preheat oven to 220°C (425°F).
  2. Toss diced potatoes with olive oil, smoked paprika, garlic powder, salt, and pepper.
  3. Spread potatoes on a baking sheet and roast for 30–35 minutes, flipping halfway, until crispy.
  4. Meanwhile, cook ground beef or turkey in a skillet over medium heat.
  5. Add taco seasoning and cook until fully browned and fragrant.
  6. Divide roasted potatoes among serving bowls.
  7. Top with seasoned meat, shredded cheese, sour cream, tomatoes, corn, and green onions.
  8. Add jalapeños if desired and serve warm.

Notes

  • Swap meat for seasoned black beans to make it vegetarian.
  • Serve with avocado or guacamole for extra creaminess.
