A comforting mac and cheese meatloaf that combines juicy seasoned meatloaf with a creamy, cheesy macaroni center for an indulgent family-friendly dinner.
Ingredients
- 1 lb ground beef
- 1 cup cooked elbow macaroni
- 1 cup shredded cheddar cheese
- 1/2 cup milk
- 1/2 cup breadcrumbs
- 1 large egg
- 1/2 small onion, finely diced
- 2 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp paprika
- 1/2 cup ketchup (optional, for topping)
Instructions
- Preheat the oven to 375°F (190°C) and grease a loaf pan.
- In a bowl, combine cooked macaroni, milk, and shredded cheddar cheese. Set aside.
- In a large bowl, mix ground beef, breadcrumbs, egg, onion, garlic, salt, pepper, and paprika until just combined.
- Press half of the meat mixture into the bottom of the loaf pan.
- Spoon the mac and cheese mixture evenly over the meat layer.
- Top with the remaining meat mixture, sealing edges.
- Spread ketchup on top if using.
- Bake for 45–55 minutes until cooked through.
- Let rest for 10 minutes before slicing and serving.
Notes
- Do not overmix the meat to keep meatloaf tender.
- Use sharp cheddar for stronger flavor.
- Leftovers reheat well the next day.
