Ingredients
- 1 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup milk
- 1/2 cup mango puree
- 1/2 cup strawberry puree
- 1 cup unsalted butter (for frosting)
- 3 cups powdered sugar
- 1/2 tsp vanilla extract (for frosting)
- Fresh strawberry slices or mango cubes (optional garnish)
Instructions
- Preheat oven to 180°C (350°F) and line a muffin tin with cupcake liners.
- Whisk flour, baking powder, and salt together.
- Cream butter and sugar until light and fluffy.
- Add eggs one at a time, mixing well after each addition.
- Stir in vanilla extract.
- Alternate adding dry ingredients and milk until combined.
- Divide batter evenly into cupcake liners.
- Bake 18–22 minutes until a toothpick comes out clean.
- Cool completely before frosting.
- For frosting, beat butter until creamy, then gradually add powdered sugar and vanilla.
- Divide frosting into two bowls; mix mango puree into one and strawberry puree into the other.
- Pipe both frostings together for a sunset swirl effect.
- Garnish with fresh fruit if desired.
