Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup milk
  • 1/2 cup mango puree
  • 1/2 cup strawberry puree
  • 1 cup unsalted butter (for frosting)
  • 3 cups powdered sugar
  • 1/2 tsp vanilla extract (for frosting)
  • Fresh strawberry slices or mango cubes (optional garnish)


Instructions

  1. Preheat oven to 180°C (350°F) and line a muffin tin with cupcake liners.
  2. Whisk flour, baking powder, and salt together.
  3. Cream butter and sugar until light and fluffy.
  4. Add eggs one at a time, mixing well after each addition.
  5. Stir in vanilla extract.
  6. Alternate adding dry ingredients and milk until combined.
  7. Divide batter evenly into cupcake liners.
  8. Bake 18–22 minutes until a toothpick comes out clean.
  9. Cool completely before frosting.
  10. For frosting, beat butter until creamy, then gradually add powdered sugar and vanilla.
  11. Divide frosting into two bowls; mix mango puree into one and strawberry puree into the other.
  12. Pipe both frostings together for a sunset swirl effect.
  13. Garnish with fresh fruit if desired.
