Description

Decadent no-bake raspberry chocolate mousse cups with layers of rich chocolate mousse, tangy raspberry compote, and whipped cream—an elegant dessert perfect for special occasions.


Ingredients

  • 1 cup dark chocolate chips
  • 1 cup heavy whipping cream (divided)
  • 2 tbsp powdered sugar
  • 1 tsp vanilla extract
  • 1 cup fresh or frozen raspberries
  • 2 tbsp granulated sugar
  • 1 tsp lemon juice
  • 1/2 tsp unflavored gelatin (optional, for firmer mousse)
  • 1 tbsp cold water (if using gelatin)
  • Chocolate shavings or fresh raspberries (for garnish)


Instructions

  1. If using gelatin, bloom it by sprinkling over cold water and set aside.
  2. Heat 1/2 cup heavy cream until just warm; pour over chocolate chips and let sit 2 minutes, then stir until smooth. If using gelatin, melt it gently and whisk into the chocolate.
  3. Let chocolate mixture cool to room temperature.
  4. Whip remaining 1/2 cup cream with powdered sugar and vanilla to soft peaks.
  5. Gently fold whipped cream into the cooled chocolate mixture to form mousse.
  6. In a saucepan, cook raspberries with granulated sugar and lemon juice over medium heat until thickened (about 5–7 minutes). Cool completely.
  7. Spoon chocolate mousse into serving cups.
  8. Add a layer of raspberry compote.
  9. Repeat layers if desired and finish with garnish.
  10. Chill for at least 1 hour before serving.

Notes

  • Gelatin is optional but helps the mousse hold its shape longer.
  • Use high-quality dark chocolate for best flavor.
