Description
Decadent no-bake raspberry chocolate mousse cups with layers of rich chocolate mousse, tangy raspberry compote, and whipped cream—an elegant dessert perfect for special occasions.
Ingredients
- 1 cup dark chocolate chips
- 1 cup heavy whipping cream (divided)
- 2 tbsp powdered sugar
- 1 tsp vanilla extract
- 1 cup fresh or frozen raspberries
- 2 tbsp granulated sugar
- 1 tsp lemon juice
- 1/2 tsp unflavored gelatin (optional, for firmer mousse)
- 1 tbsp cold water (if using gelatin)
- Chocolate shavings or fresh raspberries (for garnish)
Instructions
- If using gelatin, bloom it by sprinkling over cold water and set aside.
- Heat 1/2 cup heavy cream until just warm; pour over chocolate chips and let sit 2 minutes, then stir until smooth. If using gelatin, melt it gently and whisk into the chocolate.
- Let chocolate mixture cool to room temperature.
- Whip remaining 1/2 cup cream with powdered sugar and vanilla to soft peaks.
- Gently fold whipped cream into the cooled chocolate mixture to form mousse.
- In a saucepan, cook raspberries with granulated sugar and lemon juice over medium heat until thickened (about 5–7 minutes). Cool completely.
- Spoon chocolate mousse into serving cups.
- Add a layer of raspberry compote.
- Repeat layers if desired and finish with garnish.
- Chill for at least 1 hour before serving.
Notes
- Gelatin is optional but helps the mousse hold its shape longer.
- Use high-quality dark chocolate for best flavor.
- These cups can be made up to 24 hours in advance.
