Ingredients
- 20 jumbo pasta shells
- 2 cups cooked shredded chicken (rotisserie chicken works great)
- 1 cup ricotta cheese
- 4 ounces cream cheese, softened
- 1 cup shredded mozzarella cheese (plus ½ cup for topping)
- ½ cup grated Parmesan cheese
- 1 large egg
- 2 cups Alfredo sauce (store-bought or homemade)
- 1 teaspoon garlic powder
- ½ teaspoon Italian seasoning
- Salt and pepper, to taste
- 2 tablespoons chopped parsley (for garnish)
Instructions
- Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
- Cook jumbo shells according to package directions until al dente. Drain and set aside to cool slightly.
- In a large bowl, combine shredded chicken, ricotta, cream cheese, 1 cup mozzarella, Parmesan, egg, garlic powder, Italian seasoning, salt, and pepper. Mix until creamy and well combined.
- Spread 1 cup of Alfredo sauce evenly across the bottom of the prepared baking dish.
- Stuff each cooked pasta shell with the chicken and cheese mixture and arrange them in the dish in a single layer.
- Pour the remaining Alfredo sauce evenly over the stuffed shells and sprinkle with the remaining ½ cup mozzarella cheese.
- Cover with foil and bake for 25 minutes. Remove foil and bake an additional 10 minutes, or until bubbly and golden on top.
- Let rest for 5 minutes before serving. Garnish with chopped parsley and extra Parmesan if desired.
