Description

A creamy, cheesy, and mildly spicy one-pan chicken dish loaded with jalapeños, melty cheese, and a rich savory sauce—quick, comforting, and perfect for weeknights.


Ingredients

  • 4 boneless skinless chicken breasts
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • 23 jalapeños, sliced (seeds removed for less heat)
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded Monterey Jack or pepper jack cheese
  • 2 tbsp cream cheese
  • 1 tbsp butter (optional for extra richness)
  • Fresh cilantro or green onions for garnish


Instructions

  1. Season chicken breasts with garlic powder, onion powder, paprika, salt, and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Sear chicken 4–5 minutes per side until golden. Remove and set aside.
  3. In the same skillet, add sliced jalapeños and cook 2 minutes. Add minced garlic and cook 30 seconds until fragrant.
  4. Reduce heat to medium. Stir in heavy cream, cream cheese, butter, and both cheeses.
  5. Whisk until smooth and melted, forming a creamy jalapeño cheese sauce.
  6. Return chicken to the skillet and spoon sauce over the top.
  7. Cover and simmer 6–10 minutes, or until chicken is cooked through to 165°F (74°C).
  8. Garnish with cilantro or green onions and serve.

Notes

  • For extra heat, leave some jalapeño seeds in or add red pepper flakes.
  • Use chicken thighs instead of breasts for juicier results.
  • Serve over rice, pasta, mashed potatoes, or cauliflower rice.
