Description

Oven-Roasted French Garlic Chicken is a rustic and flavorful dish featuring tender, juicy chicken infused with aromatic herbs, garlic, and olive oil — a simple yet elegant French-inspired meal.


Ingredients

  • 4 bone-in, skin-on chicken thighs (or breasts)
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 head of garlic, cloves separated and unpeeled
  • 1 small onion, sliced
  • ½ cup dry white wine (or chicken broth)
  • ½ cup chicken broth
  • 1 tablespoon Dijon mustard
  • 1 teaspoon fresh thyme (or ½ teaspoon dried thyme)
  • 1 teaspoon fresh rosemary, chopped
  • Salt and black pepper, to taste
  • Lemon wedges and fresh parsley, for serving (optional)


Instructions

  1. Preheat oven to 400°F (200°C).
  2. Pat chicken dry with paper towels and season generously with salt and pepper.
  3. Heat olive oil and butter in a large oven-safe skillet or Dutch oven over medium-high heat.
  4. Add chicken, skin side down, and sear for 4–5 minutes per side until golden brown. Remove and set aside.
  5. In the same skillet, add the unpeeled garlic cloves and sliced onion. Sauté for 2–3 minutes until fragrant and lightly browned.
  6. Deglaze the pan with white wine, scraping up any browned bits, and simmer for 1–2 minutes.
  7. Stir in chicken broth, Dijon mustard, thyme, and rosemary. Return the chicken to the pan, skin side up.
  8. Transfer skillet to the preheated oven and roast for 25–30 minutes, or until the chicken is cooked through (internal temperature 165°F / 74°C).
  9. Remove from oven and let rest for 5 minutes. Serve with pan juices, roasted garlic, and a squeeze of fresh lemon juice.
