A flavorful twist on the classic comfort food — this Parmesan Chicken Meatloaf is juicy, cheesy, and infused with Italian herbs and Parmesan cheese, then topped with marinara and melted mozzarella for a deliciously satisfying meal.
Ingredients
- 1 ½ pounds ground chicken
- ¾ cup breadcrumbs (Italian seasoned preferred)
- ½ cup grated Parmesan cheese
- ½ cup shredded mozzarella cheese (plus more for topping)
- 2 cloves garlic, minced
- 1 small onion, finely chopped
- 2 tablespoons milk
- 1 large egg
- 1 teaspoon Italian seasoning
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ½ teaspoon red pepper flakes (optional)
- ½ cup marinara sauce (plus more for serving)
- 2 tablespoons chopped fresh parsley (for garnish)
Instructions
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease a loaf pan.
- In a large bowl, combine ground chicken, breadcrumbs, Parmesan, mozzarella, garlic, onion, milk, egg, Italian seasoning, salt, pepper, and red pepper flakes. Mix gently until combined — do not overmix.
- Shape the mixture into a loaf on the prepared baking sheet or press it into a loaf pan.
- Spread ½ cup marinara sauce evenly over the top of the meatloaf.
- Bake for 40–45 minutes, or until the internal temperature reaches 165°F (74°C).
- Remove from oven, top with an extra sprinkle of mozzarella cheese, and bake for an additional 5 minutes until melted and bubbly.
- Let rest for 5–10 minutes before slicing. Garnish with fresh parsley and serve with extra marinara sauce.

- For extra flavor, mix in a tablespoon of pesto or sun-dried tomatoes into the meat mixture.
- Use ground turkey instead of chicken for a similar texture.
- This meatloaf pairs wonderfully with mashed potatoes, roasted vegetables, or a side salad.
