Ingredients
- 12 oz (340 g) rotini or shell pasta
- 1 cup mayonnaise
- 1/4 cup apple cider vinegar
- 1/3 cup granulated sugar
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup cherry tomatoes, halved
- 1/2 cup red bell pepper, diced
- 1/2 cup celery, diced
- 1/4 cup red onion, finely chopped
- 1/2 cup shredded cheddar cheese
- 2 tbsp chopped fresh parsley (optional)
Instructions
- Cook pasta according to package instructions until al dente; drain and rinse under cold water.
- In a large bowl, whisk together mayonnaise, apple cider vinegar, sugar, salt, and black pepper until smooth.
- Add cooled pasta to the dressing and toss to coat.
- Fold in tomatoes, bell pepper, celery, red onion, and cheddar cheese.
- Mix gently until evenly combined.
- Cover and refrigerate for at least 1 hour before serving.
- Garnish with parsley if desired and serve chilled.
