Ingredients

  • 12 oz (340 g) rotini or shell pasta
  • 1 cup mayonnaise
  • 1/4 cup apple cider vinegar
  • 1/3 cup granulated sugar
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red bell pepper, diced
  • 1/2 cup celery, diced
  • 1/4 cup red onion, finely chopped
  • 1/2 cup shredded cheddar cheese
  • 2 tbsp chopped fresh parsley (optional)


Instructions

  1. Cook pasta according to package instructions until al dente; drain and rinse under cold water.
  2. In a large bowl, whisk together mayonnaise, apple cider vinegar, sugar, salt, and black pepper until smooth.
  3. Add cooled pasta to the dressing and toss to coat.
  4. Fold in tomatoes, bell pepper, celery, red onion, and cheddar cheese.
