Description

Pork Meatballs with Sweet Potato Mash & Bourbon-Maple Sauce is a comforting, elevated dinner featuring juicy pork meatballs served over creamy sweet potato mash and finished with a rich, sweet-savory bourbon maple glaze.


Ingredients

  • For Pork Meatballs:
    • 1 lb ground pork
    • 1/2 cup breadcrumbs
    • 1 large egg
    • 2 cloves garlic, minced
    • 1/2 teaspoon paprika
    • 1/2 teaspoon onion powder
    • Salt, to taste
    • Black pepper, to taste
    • 1 tablespoon olive oil (for cooking)
  • For Sweet Potato Mash:
    • 2 large sweet potatoes, peeled and cubed
    • 2 tablespoons butter
    • 1/4 cup milk
    • Salt, to taste
  • For Bourbon-Maple Sauce:
    • 1/4 cup pure maple syrup
    • 2 tablespoons bourbon
    • 1 tablespoon Dijon mustard
    • 1 tablespoon butter
    • Pinch of black pepper


Instructions

  1. In a bowl, mix ground pork, breadcrumbs, egg, garlic, paprika, onion powder, salt, and pepper until just combined.
  2. Form mixture into evenly sized meatballs.
  3. Heat olive oil in a skillet over medium heat and cook meatballs until browned and cooked through; remove and set aside.
  4. Meanwhile, boil sweet potatoes in salted water until fork-tender, about 15 minutes.
  5. Drain sweet potatoes and mash with butter, milk, and salt until smooth; keep warm.
  6. In a small saucepan, combine maple syrup, bourbon, Dijon mustard, butter, and black pepper.
  7. Simmer sauce over low heat for 5–7 minutes until slightly thickened.
  8. Return meatballs to skillet and spoon bourbon-maple sauce over them.
  9. Serve meatballs over sweet potato mash with extra sauce drizzled on top.

Notes

  • Do not overmix meatballs to keep them tender.
  • Bourbon flavor cooks down and becomes mild.
  • Can be served with roasted vegetables on the side.
  • Sauce can be made ahead and reheated gently.
