Description

Pumpkin Pecan Cobbler is a warm, gooey dessert filled with spiced pumpkin goodness and a caramel-like pecan topping that bakes into its own rich sauce — the ultimate fall comfort treat.


Ingredients

  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • ¾ cup granulated sugar
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground ginger
  • ¼ teaspoon ground cloves
  • ¾ cup pumpkin puree
  • ¼ cup milk
  • ¼ cup melted butter
  • 1 teaspoon vanilla extract
  • ½ cup chopped pecans
  • ¾ cup brown sugar, packed
  • ¼ cup granulated sugar (for topping)
  • 1 ½ cups hot water


Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease an 8×8-inch baking dish.
  2. In a medium bowl, whisk together flour, baking powder, salt, ¾ cup granulated sugar, cinnamon, nutmeg, ginger, and cloves.
  3. Stir in pumpkin puree, milk, melted butter, and vanilla extract until a thick batter forms.
  4. Spread the batter evenly into the prepared baking dish and sprinkle the chopped pecans on top.
  5. In a small bowl, combine brown sugar and ¼ cup granulated sugar. Sprinkle evenly over the batter and pecans.
  6. Slowly pour the hot water over the top without stirring — it will bake into a caramel-like sauce underneath the cobbler.
  7. Bake for 40–45 minutes, until the top is golden and the center is just set (the bottom will still be gooey).
  8. Let cool for 10 minutes before serving. Serve warm with vanilla ice cream or whipped cream.

Notes

  • Don’t mix the hot water into the batter — it forms the luscious caramel sauce as it bakes.
  • Use pure pumpkin puree, not pumpkin pie filling.
  • Best served warm, but leftovers reheat beautifully in the microwave.
