Ingredients
- 4 plain bagels
- 5 large eggs
- 1/2 cup milk or heavy cream
- 1 cup shredded cheddar or Swiss cheese
- 1/2 cup cooked bacon or sausage, crumbled
- 1/4 cup diced onion
- Salt, to taste
- Black pepper, to taste
- Optional: chopped spinach or bell peppers
- Cooking spray or butter for greasing
Instructions
- Preheat oven to 375°F (190°C) and lightly grease a baking dish.
- Slice the top third off each bagel and hollow out the center, leaving a thick shell.
- Arrange bagels upright in the prepared baking dish.
- In a bowl, whisk together eggs, milk, salt, and pepper.
- Stir in cheese, cooked meat, onion, and optional vegetables.
- Carefully pour egg mixture into each bagel cavity.
- Bake for 25–30 minutes until eggs are set and tops are lightly golden.
- Let cool slightly before serving.
