Description
Quick and tasty sheet pan tacos made with seasoned meat, colorful vegetables, and melted cheese, all roasted together for an easy weeknight dinner with minimal cleanup.
Ingredients
- 1 lb ground beef or ground chicken
- 2 tbsp olive oil
- 1 packet taco seasoning
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 small red onion, sliced
- 1 cup shredded Mexican blend cheese
- 8 small flour or corn tortillas
- Salt and black pepper, to taste
- Fresh cilantro (optional, for garnish)
- Sour cream, salsa, or guacamole (for serving)
Instructions
- Preheat the oven to 425°F (220°C) and line a large sheet pan with parchment paper.
- Add ground meat to the sheet pan and drizzle with olive oil.
- Sprinkle taco seasoning, salt, and pepper over the meat and mix well.
- Add sliced bell peppers and onion, tossing everything together evenly.
- Spread mixture into an even layer.
- Bake for 15–18 minutes, stirring halfway, until meat is fully cooked and vegetables are tender.
- Remove from oven and sprinkle shredded cheese over the mixture.
- Return to oven for 3–5 minutes until cheese is melted.
- Warm tortillas, then fill with the sheet pan mixture.
- Garnish with cilantro and serve with desired toppings.
Notes
- Use parchment paper or foil for easy cleanup.
- Swap ground meat for sliced chicken or steak if preferred.
