Description

Quick and tasty sheet pan tacos made with seasoned meat, colorful vegetables, and melted cheese, all roasted together for an easy weeknight dinner with minimal cleanup.


Ingredients

  • 1 lb ground beef or ground chicken
  • 2 tbsp olive oil
  • 1 packet taco seasoning
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 small red onion, sliced
  • 1 cup shredded Mexican blend cheese
  • 8 small flour or corn tortillas
  • Salt and black pepper, to taste
  • Fresh cilantro (optional, for garnish)
  • Sour cream, salsa, or guacamole (for serving)


Instructions

  1. Preheat the oven to 425°F (220°C) and line a large sheet pan with parchment paper.
  2. Add ground meat to the sheet pan and drizzle with olive oil.
  3. Sprinkle taco seasoning, salt, and pepper over the meat and mix well.
  4. Add sliced bell peppers and onion, tossing everything together evenly.
  5. Spread mixture into an even layer.
  6. Bake for 15–18 minutes, stirring halfway, until meat is fully cooked and vegetables are tender.
  7. Remove from oven and sprinkle shredded cheese over the mixture.
  8. Return to oven for 3–5 minutes until cheese is melted.
  9. Warm tortillas, then fill with the sheet pan mixture.
  10. Garnish with cilantro and serve with desired toppings.
