Tender roasted sweet potato rounds topped with creamy feta, honey, and herbs for a simple yet elegant appetizer or side dish.
Ingredients
- 2 large sweet potatoes, peeled and sliced into 1/2-inch rounds
- 2 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup crumbled feta cheese
- 2–3 tbsp honey
- 1 tbsp fresh thyme or rosemary, chopped
- 1/4 cup chopped pecans or walnuts (optional)
Instructions
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
- Toss sweet potato rounds with olive oil, salt, and pepper. Arrange in a single layer on the baking sheet.
- Roast for 20–25 minutes, flipping halfway, until tender and caramelized.
- Transfer to a serving platter and top with crumbled feta.
- Drizzle with honey and sprinkle with fresh herbs.
- Add chopped nuts if desired and serve warm.
Notes
- For extra flavor, add a sprinkle of smoked paprika before roasting.
- Goat cheese can be used instead of feta.
- Pairs well with roasted meats or as a holiday appetizer.
