Description

Tender roasted sweet potato rounds topped with creamy feta, honey, and herbs for a simple yet elegant appetizer or side dish.


Ingredients

  • 2 large sweet potatoes, peeled and sliced into 1/2-inch rounds
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup crumbled feta cheese
  • 23 tbsp honey
  • 1 tbsp fresh thyme or rosemary, chopped
  • 1/4 cup chopped pecans or walnuts (optional)


Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Toss sweet potato rounds with olive oil, salt, and pepper. Arrange in a single layer on the baking sheet.
  3. Roast for 20–25 minutes, flipping halfway, until tender and caramelized.
  4. Transfer to a serving platter and top with crumbled feta.
  5. Drizzle with honey and sprinkle with fresh herbs.
  6. Add chopped nuts if desired and serve warm.

Notes

  • For extra flavor, add a sprinkle of smoked paprika before roasting.
  • Goat cheese can be used instead of feta.
