Description

Soft and chewy salted pistachio chocolate chip cookies loaded with crunchy pistachios, melty chocolate chips, and finished with flaky sea salt for the perfect sweet-salty bite.


Ingredients

  • 2 1/4 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cup unsalted butter, melted and cooled
  • 3/4 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 large egg yolk
  • 1 tsp vanilla extract
  • 1 cup semi-sweet chocolate chips
  • 3/4 cup shelled pistachios, roughly chopped
  • Flaky sea salt (for topping)


Instructions

  1. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a bowl, whisk together flour, baking soda, and salt.
  3. In a separate bowl, mix melted butter, brown sugar, and granulated sugar until smooth.
  4. Add egg, egg yolk, and vanilla extract and mix until fully combined.
  5. Gradually add dry ingredients to the wet mixture and stir until just combined.
  6. Fold in chocolate chips and chopped pistachios.
  7. Scoop dough into balls and place on prepared baking sheets, spacing 2 inches apart.
  8. Bake for 10–12 minutes until edges are set and centers are soft.
  9. Remove from oven and immediately sprinkle with flaky sea salt.
  10. Cool on baking sheet for 5 minutes, then transfer to a wire rack.

Notes

  • Lightly toast pistachios for deeper flavor.
  • Do not overbake to keep cookies chewy.
