Ingredients

  • 1 unbaked pie crust (9-inch)
  • 1 lb (450 g) breakfast sausage
  • 1 tbsp butter
  • 2 tbsp all-purpose flour
  • 1 1/2 cups milk
  • 4 large eggs
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella or Monterey Jack cheese
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp paprika
  • 1/4 tsp garlic powder


Instructions

  1. Preheat oven to 190°C (375°F).
  2. In a skillet over medium heat, cook sausage until browned; remove half and set aside.
  3. Add butter to remaining sausage drippings, sprinkle in flour, and cook for 1 minute.
  4. Gradually whisk in milk and simmer until thickened to make sausage gravy; season with salt and pepper.
  5. Spread reserved cooked sausage evenly over the pie crust.
  6. Sprinkle shredded cheeses over the sausage.
  7. In a bowl, whisk eggs with salt, pepper, paprika, and garlic powder.
  8. Pour egg mixture over the filling.
  9. Bake for 35–40 minutes until the quiche is set and lightly golden.
  10. Slice quiche and spoon warm sausage gravy over each serving.

Notes

  • Let quiche rest 10 minutes before slicing.
  • Sausage gravy can be made ahead and reheated.
