Ingredients
- 4 banana peppers, seeded and diced
- 2 tbsp olive oil
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 3 cups vegetable broth
- 1 cup heavy cream
- 1 1/2 cups shredded mozzarella cheese
- 1/2 cup cream cheese, softened
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp dried oregano
- 1/4 tsp red pepper flakes (optional)
- 2 tbsp chopped fresh parsley or basil (optional)
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and sauté until soft and translucent.
- Add garlic and cook for 30 seconds until fragrant.
- Stir in diced banana peppers and cook for 2–3 minutes.
- Pour in vegetable broth and bring to a gentle simmer.
- Reduce heat to low and stir in cream cheese until melted.
- Add heavy cream, mozzarella cheese, salt, pepper, oregano, and red pepper flakes.
- Simmer gently, stirring often, until soup is creamy and smooth.
- Taste and adjust seasoning as needed.
- Garnish with fresh herbs and serve hot.
