Ingredients

  • 4 banana peppers, seeded and diced
  • 2 tbsp olive oil
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 3 cups vegetable broth
  • 1 cup heavy cream
  • 1 1/2 cups shredded mozzarella cheese
  • 1/2 cup cream cheese, softened
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp dried oregano
  • 1/4 tsp red pepper flakes (optional)
  • 2 tbsp chopped fresh parsley or basil (optional)


Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and sauté until soft and translucent.
  3. Add garlic and cook for 30 seconds until fragrant.
  4. Stir in diced banana peppers and cook for 2–3 minutes.
  5. Pour in vegetable broth and bring to a gentle simmer.
  6. Reduce heat to low and stir in cream cheese until melted.
  7. Add heavy cream, mozzarella cheese, salt, pepper, oregano, and red pepper flakes.
  8. Simmer gently, stirring often, until soup is creamy and smooth.
  9. Taste and adjust seasoning as needed.
  10. Garnish with fresh herbs and serve hot.
