Description
A luxurious seafood pot pie filled with tender shrimp and lobster in a creamy sauce, topped with golden Cheddar Bay biscuit dough for an indulgent comfort meal.
Ingredients
- 1/2 lb (225 g) shrimp, peeled, deveined, and chopped
- 1/2 lb (225 g) lobster meat, chopped
- 2 tbsp unsalted butter
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 1/4 cup all-purpose flour
- 1 1/2 cups seafood or chicken broth
- 1 cup heavy cream
- 1/2 cup shredded cheddar cheese
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp Old Bay seasoning
- 1 cup frozen peas and carrots
- 1 box Cheddar Bay biscuit mix (with included seasoning packet)
- Milk and butter as required for biscuit mix
Instructions
- Preheat oven to 190°C (375°F) and grease a baking dish.
- In a large skillet, melt butter over medium heat.
- Add onion and cook until softened; stir in garlic and cook 30 seconds.
- Sprinkle flour over mixture and cook 1 minute.
- Gradually whisk in broth and cream; simmer until thickened.
- Add cheddar cheese, salt, pepper, and Old Bay; stir until smooth.
- Fold in shrimp, lobster, and frozen vegetables.
- Pour seafood filling into prepared baking dish.
- Prepare Cheddar Bay biscuit dough according to package instructions.
- Spoon biscuit dough evenly over the filling.
- Bake uncovered for 25–30 minutes until biscuits are golden and filling is bubbly.
- Brush biscuits with included seasoning butter if desired and serve hot.
Notes
- Do not overcook seafood before baking—it will finish cooking in the oven.
- Use ramekins for individual pot pies.
- Great served with a simple green salad.
