Description

Crispy on the outside and fluffy on the inside, these smashed garlic-parmesan potatoes are bursting with buttery, garlicky flavor and make the perfect side dish for any meal.


Ingredients

  • 1 ½ pounds baby or small Yukon Gold potatoes
  • 2 tablespoons salt (for boiling water)
  • 3 tablespoons olive oil
  • 2 tablespoons unsalted butter, melted
  • 3 cloves garlic, minced
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon dried thyme (optional)
  • ¼ cup grated Parmesan cheese
  • 1 tablespoon chopped fresh parsley (for garnish)


Instructions

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Place potatoes in a large pot, cover with water, add salt, and bring to a boil. Cook for 15–20 minutes, until fork-tender.
  3. Drain the potatoes and let them cool slightly.
  4. Place the potatoes on the prepared baking sheet and gently smash each one using the bottom of a glass or a potato masher.
  5. In a small bowl, mix olive oil, melted butter, minced garlic, salt, pepper, and thyme.
  6. Brush the mixture generously over each smashed potato.
  7. Sprinkle with grated Parmesan cheese.
  8. Bake for 25–30 minutes, until golden brown and crispy on the edges.
  9. Garnish with fresh parsley and serve warm.

Notes

  • For extra crispiness, broil the potatoes for 2–3 minutes after baking.
  • Use freshly grated Parmesan for the best flavor and melt.
