Description

A flavorful baked chicken dish stuffed with spinach and feta, producing a tender, juicy entrée packed with Mediterranean-inspired flavors.


Ingredients

  • 4 boneless skinless chicken breasts
  • 2 cups fresh spinach, chopped
  • 1 cup feta cheese, crumbled
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp dried oregano
  • 1/2 tsp paprika
  • Salt and pepper to taste


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat olive oil and sauté garlic and spinach until wilted. Remove from heat and mix in feta cheese.
  3. Cut a pocket into each chicken breast and stuff evenly with the spinach-feta mixture.
  4. Season the outside of the chicken with oregano, paprika, salt, and pepper.
  5. Place the stuffed chicken breasts in a baking dish and bake for 25–30 minutes, or until chicken reaches an internal temperature of 165°F (74°C).
  6. Allow to rest for a few minutes before serving.

Notes

  • You can add sun-dried tomatoes to the stuffing for extra flavor.
  • Use frozen spinach if fresh is not available; just thaw and squeeze out excess moisture.
  • Pair with rice, quinoa, or a fresh salad.
