Description
A flavorful baked chicken dish stuffed with spinach and feta, producing a tender, juicy entrée packed with Mediterranean-inspired flavors.
Ingredients
- 4 boneless skinless chicken breasts
- 2 cups fresh spinach, chopped
- 1 cup feta cheese, crumbled
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1 tsp dried oregano
- 1/2 tsp paprika
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet, heat olive oil and sauté garlic and spinach until wilted. Remove from heat and mix in feta cheese.
- Cut a pocket into each chicken breast and stuff evenly with the spinach-feta mixture.
- Season the outside of the chicken with oregano, paprika, salt, and pepper.
- Place the stuffed chicken breasts in a baking dish and bake for 25–30 minutes, or until chicken reaches an internal temperature of 165°F (74°C).
- Allow to rest for a few minutes before serving.
Notes
- You can add sun-dried tomatoes to the stuffing for extra flavor.
- Use frozen spinach if fresh is not available; just thaw and squeeze out excess moisture.
- Pair with rice, quinoa, or a fresh salad.
